Double cooking
  • Cook the pasta using 100 g of pasta, 10 g of salt, 1 l of water.
  • Do not add oil to the cooking water as it decreases the ability of the pasta to bind with the sauce.
  • Respect the pre-cooking times indicated on the packet.
  • Drain the pasta as soon as it is pre-cooked.
  • After pre-cooking the pasta may be conserved in a fridge or chiller for up to 24 hours.
  • Heat up the past for the heating times indicated on the packet.
  • Drain the pasta as soon as it has been heated up.
  • Once the sauce has been added the pasta should be served within 5 minutes.
  • Before being served the pasta may be kept hot over a bain-marie for a maximum of 15 minutes.
  • The product must be used in accordance with the FIFO principle (first in – first out, using the products that are closest to their expiry date first).
